Buster Beaton (Owner)
Buster Beaton and his late wife, Judy, began Nassau Health Foods in a tiny store front on South 8th Street over 25 years ago. Educated as a school teacher and coach, Buster still views the store as an extension of the classroom. Customers can come learn how to take responsibility for their own health while he encourages from the sidelines. Since Nassau Health Foods’ humble 600 sq. ft. building, Buster has continued to focus on his customers’ well-being. His passion for natural foods and concern for the health of his community is what got Buster going and it’s what keeps Nassau Health Foods growing today.
Kim Beaton (Office/Business Manager)
While her responsibilities are mostly behind the scenes, Kim Beaton performs an integral role at Nassau Health Foods as our Office/Business Manager. Kim hails from Lake City and her real estate background gives her a keen understanding of the importance of efficiency and customer service to our business. When Kim’s not running our back office she enjoys sharing her time with family and friends, shelling at the beach, and traveling with her husband Buster.
Our store assistant manager, Janet Nowak, grew up on her family’s rural Wisconsin farm where she developed an early appreciation for healthy living. Janet has 16 years experience in the natural foods industry, and once owned a health food store in Hawaii. When not helping our customers with healthy eating and lifestyle choices, Janet is an outdoor enthusiast who enjoys camping, hiking, and fishing.
Born in Iowa, and raised in his family’s grocery business, Paul James has lived in Florida long enough to feel like a native. Paul’s journey to healthy living began in 2008 when he was diagnosed with Type II diabetes. Through diet and lifestyle changes Paul lost 130 pounds and no longer needs diabetic medications. He has become a passionate cyclist and has logged 10,000 miles over the last 2.5 years. With over 35 years in the grocery and produce business Paul is well equipped to oversee this department.
A rare native Floridian, Betsy Harris is our Grocery Manager. Betsy has been a vegetarian for over ten years, and it’s her passion for cooking and preparing fresh organic foods that first interested her in working at Nassau Health Foods. When asked about her motivation for working here, Betsy replied that “it’s important to me to work in an industry that reflects my core values.” Betsy is also well informed about gluten free foods and non-GMO products. She encourages customers to seek her out for information on those issues. In her spare time Betsy is an avid gardener and surfer and shares her home with son Jonah and dog Frankie.
Our supplement manager, Scott Olsen, has been in the industry since 1997. He has wide-ranging experience as a grocery and produce buyer as well as a supplement manager in large and small stores alike. Scotts’ industry experience and background in cell biology have well equipped him to help our customers with their supplement choices. Scott is a sci-fy enthusiast who enjoys craft beer, fishing, and shrimping.
Born in Colorado and raised in California, Shannon got sand in her shoes about seven years ago and relocated permanently to Amelia Island. A longtime customer, Shannon decided that since Nassau Health Foods was such a fun place to shop then it must also be a fun place to work – a decision we’re glad she made. In her spare time Shannon enjoys teaching yoga, volunteering at our local Boys and Girls Club, and organic gardening.
Denise (Customer Service)
Denise is a Maryland native and mother of 4 whose interest in natural foods dates back to her college days where she studied psychology. Since college, she has reset General Nutrition Center stores, taught sales techniques, and sharpened her customer service skills with a 10 year stint working for the Ritz Carlton. Denise’s outside interests include music, reading, and puppetry arts. In 1996, her marionettes decorated the Christmas tree in the White House Blue Room.
A longtime Fernandina Beach resident, Matt Altman graduated from Florida Southern with a major in Kinesiology and Physiology. Matt was a cross country athlete in college and is now a certified strength and conditioning specialist. Matt enjoys volunteering with the Amelia Island Running Club in his spare time and desires to eventually coach. At Nassau Health Foods, Matt is busy increasing his supplement and natural foods knowledge while helping customers achieve their nutritional goals.
Chances are if you’ve had lunch at the Mustard Seed Cafe’ you’ve met Jenna Roberts. Most days she is at the Cafe counter taking your orders and providing great customer service with her wonderful smile. A South Carolina native, Jenna describes herself as a beach bum, a music lover (she plays violin), and avid traveler. When asked about what she enjoys most about working at NHF she replied “It’s the positive energy of the staff-which even seems to go with me when I leave the store”.
Originally from Chicago, Illinois, Nick is a military veteran who served in the Marine Corps infantry and security forces. Nick enjoys all sports, is an avid reader of science fiction and history, and has a keen interest in politics. While Nick has a background in the grocery industry, it was through his wife’s encouragement that he applied at NHF and he has become a great addition to our staff.
Originally from Miami, Leslie and her family, like many, were charmed by Amelia Island’s quieter lifestyle. Upon her arrival, Leslie used her experience as a Miami business owner to launch a second career helping local businesses with their marketing and public relations needs. At NHF, Leslie is responsible for maintaining our social media presence, organizing and promoting special events, and reaching out to our community about all things Nassau Health Foods! In her free time, Leslie enjoys spending time with her family and employs her artistic skills crafting, or building furniture alongside her husband to decorate their home.
Chris originally hails from Charlotte, North Carolina and has been an area resident about 5 years. Dad of 3 children, Chris enjoys spending time at the beach with his family. Chris is a self taught computer whiz cutting his teeth on the old Commodore 64′s back in the 80′s. When not working his day job Chris remains behind the scenes maintaining our POS system and website.
Currently enrolled at FSCJ in their computer information technology program, Hunter is a Nassau County Native. Hunter helps maintain our computer and POS system while working to stream line our use of technology to help improve our operational efficiency. Hunter brings not only his computer expertise to NHF, but also a keen interest in natural foods and supplements. This interest was first sparked in his successful quest to lose 100 pounds! When not working or going to college, Hunter enjoys computer programming, video games, jogging, and playing guitar.
